The easiest solution is to set that Saturday is not a delivery day for next day orders.

I have used this and it works nicely. Any orders placed on a Friday will have a delivery date of Monday.

You can do this by going to Shipping Settings > Order Fulfillment Settings

Then you set Saturday as a Non Delivery Day for Non-Prime One Day Premium Delivery
